COPPA PIACENTINA PDO, FONTINA PDO AND PORCINI MUSHROOM CREAM TELL THE STORY OF ITALY

Coppa Piacentina PDO, made with Italian meat from farms in Emilia-Romagna and Lombardy, is encased in natural casing and tied by hand, while slow, gradual ageing allows the Coppa to remain soft inside. The result is a compact, even, marbled slice, with a texture that slowly melts on the palate. Fontina PDO, on the other hand, brings the mountains of the Aosta Valley: a melting, soft and aromatic cheese, melted in the panino to become an enveloping element. The porcini mushroom and truffle cream completes the landscape with aromas of woodland, earth and forest floor. It is intense yet elegant, bringing depth to the Coppa Piacentina PDO while complementing the sweetness of the Fontina PDO. The result is a meeting of two Italian traditions: Emilian charcuterie and Alpine cheesemaking culture.

LEMON AND PEPPER BRIGHTEN THE WOODLAND FLAVOURS

Matteo could stop at its richest elements: Coppa Piacentina PDO, Fontina PDO and porcini mushroom cream already form a full, creamy and deep structure. But it is precisely the lemon and pepper that keep it from becoming predictable. Lemon arrives like a fine blade of freshness. Its acidity lightens the richness of the cheese and makes the savouriness of the Coppa Piacentina PDO more distinct. Pepper, meanwhile, works on the aromatic dimension: it comes afterwards, with a brief yet persistent spiciness, leading the palate towards the finish. The porcini mushroom and truffle cream thus becomes even more distinct. Lemon lifts its aromas, while pepper accentuates its depth. Each bite changes direction slightly: first the softness of the Fontina PDO, then the meat, followed by the woodland flavours and finally a citrusy, spicy jolt. It is the detail that transforms intensity into balance.
