PORCHETTA DI ARICCIA PGI, MELTED BRIE AND ONION
Porchetta di Ariccia PGI is a speciality deeply rooted in the Castelli Romani, recognised as a cooked pork product, seasoned and prepared according to specific characteristics; its distinctive features include a crisp crust and an aromatic profile of rosemary, garlic and pepper. In the Marcello panino, Porchetta di Ariccia PGI meets melted Brie, which adds milky softness and a creamy texture. The cheese thus becomes a counterpoint to the meat, embracing its savouriness and making the bite more enveloping. Grilled, caramelised onion completes the composition with a sweet and tangy component. Three ingredients, three aromatic temperatures: roast meat, milkiness and vegetal sweetness.

GRILLED, SWEET-AND-SOUR CARAMELISED ONION SOFTENS THE PORCHETTA
Marcello works through contrast. Porchetta di Ariccia PGI brings roast meat, aromas and savouriness. Melted Brie adds an almost melting softness, creating a creamy layer that accompanies the meat and softens its sharper notes. Then comes the onion. Grilling develops deeper notes; caramelisation gives it a full sweetness; the sweet-and-sour element, however, preserves a tangy note that prevents the finish from becoming heavy. This is precisely what makes Marcello interesting: Porchetta di Ariccia PGI is not simply sweetened, but crossed by a note that enhances its aromatic character. The first bite is meaty and warm, the Brie makes it soft, and the onion opens up a sweet and tangy trajectory that lingers. A panino Roman in character, contemporary in its composition, created for those who love porchetta but want to discover it through a new balance.
