Cooked ham opens Giorgia with its delicate sweetness and even texture. It is a reassuring, soft base, capable of embracing more intense ingredients without losing its identity. Melted Brie adds a second layer of softness, creamier and milkier, with nuances reminiscent of butter and nuts. Together, they create a full yet still elegant centre of flavour. White meat pâté* introduces a more concentrated and deeper element, while white truffle butter brings the unmistakable aroma of truffle in a velvety, lingering form. The result is a panino built around roundness, yet ready to change pace thanks to the final elements. Each ingredient has a precise role: to support, melt, concentrate and perfume.


LEMON AND PEPPER BRIGHTEN THE WHITE TRUFFLE BUTTER
Giorgia’s truly contemporary touch comes from two very simple ingredients: lemon and pepper. White truffle butter brings a deep, intense, almost balsamic aromatic note. White meat pâté* supports it with a full texture, while cooked ham and Brie create a soft, milky base. Then lemon changes the perception. Its acidity cuts through the richness of the butter and cheese, making the flavour of the white truffle butter more distinct and the meat more discernible. Pepper follows immediately afterwards, with a brief spiciness that prolongs the aromatic profile. It is an almost musical progression: sweet, creamy, intense, citrusy, spicy. Giorgia surprises precisely because it does not seek extreme ingredients. It uses simple contrasts to bring depth to a rich composition. The result is a soft, opulent panino, yet crossed by an unexpected freshness that invites you back for the next bite.
