Aubergine parmigiana*

Comfort food becomes gourmet

The Ingredient
Soft layers of aubergine meet tomato, mozzarella and Parmigiano Reggiano PDO: a creamy, savoury and fragrant texture, where the sweetness of the vegetables, acidity and gratinated crust create a rich, enveloping and irresistible flavour.
The Origin

SOUTHERN TRADITION, TERRITORY AND ITALIAN MEMORY.

Aubergine Parmigiana belongs to the great Southern Italian gastronomic tradition and is recognised as a Traditional Agri-food Product in several regions, each preserving its own interpretation, such as the one we use, produced expressly in Sicily. Aubergines, tomato, cheeses and basil become layers of Italian memory, slowly cooked until they blend together. It is a popular, generous recipe, deeply rooted in its territory and unforgettable for generations, with shared pride.

EVERY REGION PRESERVES ITS OWN VERSION.
Did You Know?

EVERY REGION PRESERVES ITS OWN VERSION.

Some fry the aubergines, some grill them, while others choose mozzarella, pecorino or Parmigiano. The result changes, but remains irresistible. In a panino, it becomes a surprising filling, capable of bringing a Sunday dish into contemporary cuisine. Its rich character pairs magnificently with crisp bread and fresh ingredients, bringing balance to every bite, always.
